Grapes 100% Moscato d’Asti.

HARVEST
Depending on the maturity of the grapes, harvesting takes place between 1st and 10th of September.

WINE MAKING
The grapes are pressed. To the obtained must they add some enzymes to fin it with selected yeasts and put it in oak barrels, tonneau of 500 litres for the fermentation.
The slow and complete fermentation, the processes of decomposition of the yeasts, the natural stabilisation and the controlled micro-oxygenation promote the forming of particular aromas, that, together with those deriving from the grapes give to this wine unique features.

ORGANOLEPTIC FEATURES
Colour: limpid, intense straw-yellow with golden taints.
Bouquet: fruity, persistent, lightly boisé (with oak hints) but typically aromatic, with honey hints and camomile.
Taste: full, soft, rich in fruity aromas; it has light almond note, distinctive and long-lasting.

HOW TO SERVE
Temperature:12-15 degrees.
Uncork half an hour before serving in aged white wine glasses.
Food pairings: with snacks and main dishes. It’s great with crustacean and matured and strong cheeses as roquefort or gorgonzola.

CURIOSITY
One day during the harvest we thought: “ why don’t we try to make taste Moscato to the people who don’t like sweet wine?” …and we succeeded in it.
