Arneis grapes, selected from southern vineyards in the
town of Monteau Roero (province of Cuneo). Roero is a
small area situated left of the river Tanaro, between Alba
and Asti with lands rich in sand and calcareous marls.
HARVEST
Depending on the maturity of the grapes harvesting takes
place between the 19th and 23rd of September.
WINE MAKING
The grapes are pressed and the obtained must is fined
organically. Then, after a racking to eliminate the lees,
some selected yeasts are introduced to promote the
alcoholic fermentation.
At the end of this process the wine
stays in contact with the fermentation lees for 20-25 days,
then it is cooled at 10-12 degrees and racked for many
times to reach the clarity, then it will be ready for
bottling.
ORGANOLEPTIC FEATURES
Colour: yellow with green taints, clear and bright.
Bouquet: characteristic, strong, persistent with hints of
honey and camomile.
Taste: full, long and perfectly balanced.
HOW TO SERVE IT
Temperature: 10-12 degrees.
Serve in white wine glasses.
Food pairings: it pairs well with light snacks, brunch, fish
and first courses. It’s better to drink it when it’s young.
NOTES
Arneis, in Piedmont dialect means “capricious”, thanks to
its good alcohol content, is great with meat. You can
drink it with white not very elaborated meats, roast veal,
chicken salad, vitello tonnato, barbeque chicken breast,
steamed fish, as red mullet or drowned octopus, rice
stuffed peppers.
