Gavi D.O.C.G.

It is made from Cortese grapes, as the Gavi from Gavi, cultivated on hills that are not within the territory of the Commune of Gavi, but in the surrounding area; as to the alcoholic strength, it has at least one degree less than Gavi from Gavi; it is very fresh and young, perfect as an aperitif.

HARVEST
Harvesting takes place between 19th and 23rd September,
depending on the maturity of the grapes.

WINE MAKING
The grapes are pressed and the obtained must is clarified with enzymes. Then, after a racking made to eliminate the lees, some selected yeasts are introduced to promote the alcoholic fermentation.
At the end of this process the wine is kept on the fermentation lees for 20-25 days, then it is cooled at 12 degrees and racked several times, until it reaches the suitable clarity.

ORGANOLEPTIC FEATURES
Colour: bright straw-yellow.
Bouquet: characteristic, delicate.
Taste: dry, fresh and pleasant.

HOW TO SERVE IT
Temperature: 8-10°C.
Serve in glasses for white young wines.
Food pairings: good as an aperitif, for brunch, starters and fish. Better if drunk young.
