Our wines -> Barbera d'Asti D.O.C. |

The first information on Barbera are to be found in a
document of the town hall of Nizza Monferrato dated
XVII, but they officially mentioned it just in 1798 in the
first ampelography of the species of vines cultivated in
Piedmont. “
A strong wine, always rather severe, but rich
in its bouquet and its taste that mixes strength and
refinement”, Barbera is one of the best-known and
appreciated wines in Italy for its generosity in alcohol.
THE HARVEST
Harvesting takes place between 1st and 10th October,
depending on the ripening of the grapes.
WINE MAKING
The selected grapes are pressed, and the stalks are
removed; they are pumped in thermo-controlled
vinificators where some selected yeasts are add to promote
the alcoholic fermentation.
After the devatting and a
racking they obtain a malo-lactic fermentation for a
natural de-acidification. The following racking are made
to obtain a clearer wine ready to be bottled..
ORGANOLEPTIC FEATURES
Colour: bright ruby red.
Bouquet: vinous, clean and deep.
Taste: fresh, intriguing, with an immediately perceptible
soar black cherry flavour.
HOW TO SERVE IT
Serve in red wine glasses, where you can have a
decantation.
Temperature: 16-18 degrees.
Pairings: it pairs with legumes, risotto, second courses of
meat and fresh or medium matured cheeses.
